Yes, the Koh Collective is here to share all things YogaKoh and RetreatKoh – but we also want to be more than just a news source. We hope to be a space where our koh-mmunity can strive towards achieving personal growth, where we can share tips, media, and products we are loving, and where we can interact with each other.


Each month, we will have a dedicated section to reflect on wellness practices, products, and experiences that inspire us. Ranging from recipes and easy snacks, to books and podcasts, to brands, gear, and studios – we want to share everything that keeps us feeling satisfied, energized, and motivated!

A New Earth: Awakening to Your Life’s Purpose by Eckhart Tolle



With all the overstimulating media being thrusted onto us daily, we find sitting back with a good book is a great way to destress and ground ourselves. Taking time out of your day to read, be it ten minutes before you start your morning routine or an hour before you go to bed, is a healthy habit to strengthen your mind, and enjoy yourself while doing so. 


In our special first edition of the Koh Collective, we have two books that we are recommending this month. The first is a fictional story, The Midnight Library, by Matt Haig, and the second is a self-help book, A New Earth: Awakening to Your Life’s Purpose, by Eckhart Tolle – so whatever you are into, we have a reading rec for you!


The Midnight Library is an exciting fiction read that dives into the power of choice. Haig highlights the beauty of the infinite number of possibilities and opportunities in your lifetime and explores how everything can change with one decision, big or small. Can you seek out happiness, or do you create happiness? 

 

This is a must-read before your next YogaKoh or RetreatKoh adventure – you never know what will change when you take a chance! We promise, this novel, and our once-in-a-lifetime retreat experiences, are worth your time!  


Our second book is written by world famous spiritual leader and best selling author, Eckhart Tolle. In A New Earth: Awakening to Your Life’s Purpose, Tolle explains how recognizing and overcoming the ego is the key to finding true happiness and purpose in your life. Tolle urges readers to consider how attachment to their ego causes anger, jealousy, and suffering in their lives, and guides readers towards unlocking a heightened state of consciousness.


If you are looking to do some reflecting on yourself and your purpose in life, this is the perfect book to pick up. Tolle’s philosophies have truly changed the way we live in the Now.

Recipe: 

Spring Shrimp Mango Salad

This is one of our all-time favorite salads. As we revel in spring in Australia, or reminisce on the warmer months in the US, we wanted to share a recipe that transports us straight into sunshine – through our taste buds, of course! 


Our spring shrimp mango salad is the perfect opening recipe to share in the Koh Collective Favorites as it uses seafood, an ode to the ocean and its immense value in our retreats and trainings, fresh veggies, the most important part of a yummy salad, nuts, for a salty, crunchy surprise, and mango, because we love a little something sweet! 


What you need:

  • Spring mix or your preferred leafy green

  • 1lb of medium shrimp, raw, peeled, deveined (optional for vegetarian/vegans)

  • 1 box of couscous (optional for gluten free)

  • 1 large mango

  • 1 large avocado

  • 1 cucumber

  • ½ small red onion 

  • ½ cup unshelled pistachios

  • 2 cloves of garlic

  • 1 tablespoon of butter


Dressing:

  • ¼ cup olive oil

  • ¼ cup white wine vinegar

  • 1 hefty tablespoon of dijon mustard

  • Juice of 1 lemon

  • Salt, pepper, and garlic powder to taste


Start by making all your couscous as directed on the box, and set aside to cool. 


Season your shrimp with salt, pepper, and paprika. Melt your tablespoon of butter in a pan, mince 2 cloves of garlic, and brown for 30 seconds before adding in your seasoned shrimp to the pan. Once cooked, set aside to cool. 


Dice your mango, avocado, cucumber, and onion into large cubes. Chop your pistachios and add your diced produce into a large bowl with your spring mix base. Add your cooled shrimp and couscous. Toss.


For dressing, mix your olive oil, white wine vinegar, dijon mustard, and lemon juice together. Add salt, pepper, and garlic powder to taste, and dress. Enjoy!
